Authentic Zaru Soba recipe (Cold Soba Noodles) ざるそば

Super easy way to make Zaru soba!

With all my love to cold Zoba!! I try doing it myself and found my favorite recipe that’s very easy and tasty! Which I’m about to share with you below!

– How to make the Zaru Soba –

Part#1 Making Soba Soup/ Soba Dipping sauce
Part#2 To Boil Soba Noodle
Part#3 To cook crispy tempura
Part#4 Toppings/Garnish

—— PART #1 ——

“Making Soba Soup/ Dipping sauce”
(- めんつゆ : mentsuyu -)

You can make the recipe below or you can buy a bottle of instant Mentsuyu sauce at the Asian store to save time.

INGREDIENTS (for 1 serve)

  • Drinking-Water 200 g.
  • KatsuoBushi* 3 g.
  • 1 Kombu (Dried kept) ( ~1″x1″ )
  • Shoyu (Soy sauce) 2 Tbsp.
  • Mirin** 1 Tbsp.
  • Sugar 1 Tbsp.

(*Mirin = Japanese sweet cooking sauce)
(**Katsuobushi = Japanese dried Skipjack Tuna as shavings for flakes)

INSTRUCTION (for 1 serve)

  1. In a medium saucepan, boiled the Kombu and Katsuo Bushi in the 200 g. of water over medium-high heat. (~6-8 Minutes) . Turn off the fire and wait for the Katsuobushi to fall to the bottom. Filter the liquid through a strainer. You’ll now have a delicious “dashi” in the saucepan.
  2. Bring Dashi, Shoyu (Soy sauce), Mirin, Sugar to gentle boil over medium heat. remove from heat and allow to cool.
  3. In the meantime, start making the Soba part. (Once the Dashi is cool, keep it in the fridge.)


—— PART #2 ——

“To boil Soba Noodles”
(- Cold zoba -)

INGREDIENTS (for 1 serve)

  • Dried Soba Noodles: 1 bundle (Buckwheat noodles)
  • 1 Pot of water
  • 1 bowl of Iced water

INSTRUCTION

  1. Follow my 3 boil recipe below. (or just cook Soba noodles according to the package instructions.)
    Boil a lot of water in a pot. (Don’t add salt). Add dried Soba noodles in the boiling water in a circulate motion over medium heat. — [1st Boil]
  2. Wait until it boils again then add 1 cup of room-temp water. — [ 2nd Boil]
  3. The last boil is the alarm to finish. Turn off the flame. Check the tenderness and do not overcook. Before you drain (nearly ‘Al dente‘ style)
  4. Drain the Soba noodles into the sieve and rinse the noodles to get rid of starch under running cold water.
  5. Shake off the sieve to drain completely and transfer the noodles to the iced water in a bowl. Set aside until it’s cool.


—— PART #3 ——

“How to cook crispy tempura”
(- Ebi fry / 天ぷら -)

INGREDIENTS (for 1 serve)

  • 3-5 Tiger Prawn (You decided)
  • 1 cup (125 g.) all-purpose flour (plain flour)
  • 1 cold egg yolk
  • 1/4 Tbsp. of Baking powder
  • 1 cup of cold water

INSTRUCTION FOR “TEMPURA”

  1. Peel the shell of the prawn. Leaves only the section of the shrimp tail. Carefully peel the shell from the tail side and devein. (score the back of the prawns and remove all the poo)
  2. Simply score the belly side of the prawn with a small knife and snap the prawn muscle to straighten it with a finger. (Don’t cut too deep)
  3. Pat the shrimp dry between paper towels, then refrigerate until ready to fry.
  4. Mix the flour and egg yolk together then add the baking powder. Mixing them together to make a batter. (Set aside)
  5. Coat the prawns with flour (Powder).
  6. Boil the oil in the pot.
  7. Dip your 5 fingers into the batter and spring the batter out of your fingers into the pot.
  8. Then quickly dip the prawn into the batter and fried.

*If you final coating the prawn with “Panko crumbed”. You don’t need to do the No.7

—— PART #4 ——

“Zaru Soba Toppings /Garnish”
(- 漬物 -)

INGREDIENTS (for 1 serve)

  • Scallions
  • Daikon (White radish)
  • Shredded nori seaweed (Kizami nori)
  • Wasabi

INSTRUCTION FOR “Zaru soba side dish”

  1. Slice the scallions and put it in the small plate or at the side of the plate with wasabi.
  2. Grates the daikon radish with a knife and leave it in the colander a bit while to drain water then place it in the tiny plate.
  3. Topping the Soba with the shredded nori seaweed.

Ready to serve!!
